The Benefits of Kale {even though it tastes like tree bark}

Kale. It is typically a forbidden word, simply because we all know it's not bacon, nor will it ever be bacon.

Is Kale worth adding into your diet even when it makes you gag just giving it a good whiff?

There are many sources that would argue that because of it's amazing nutrient quality, lack of any calories, plenty of fiber to keep things...um...moving, as well a huge amount of Vitamin C & Vitamin K, you should eat Kale always and forever.

I agreed with these sources and whipped up a HUGE Kale salad yesterday. It consisted of:

Kale Broccoli Slaw Sprinkle of Cheese Grape tomatoes Breaded Chicken (don't judge me.) A drizzle of Raspberry Vinaigrette

You can also add sliced almonds or feta cheese, but that just seemed like torture.

After my first bite, which lets face it...was mostly breaded chicken and cheese, I thought, "Well, this isn't terrible." but after crunching through more of that thick leafy green, I kept thinking, "I'm going to have to add more dressing or chicken...or maybe both...or I might just vomit." But I was committed to this new healthy meal I had just prepared in a big mixing bowl and continued to power through, hoping that my taste buds and gag reflexes would subside as I ate more. Maybe, instead of weeks of getting used to something, I could accomplish that same thing in a couple minutes.

I could not.

I ate most of my beautiful (looking) salad, but couldn't finish the whole bowl. I am only *so strong*.

So do the benefits of Kale actually outweigh the way it tastes or the way it feels crunching through tree bark? Here are some things I noticed after mowing through this dark, leafy plant:

-I did not have more energy right away, but I did have more energy later on.. -Gas. Holy gas. -I woke up feeling less bloated and more slender than I have felt in a while...so...

I probably should use grilled chicken or other lean meats on my salads as well as hard boiled eggs instead of what I chose to use (even though it was the only thing that saved that salad.)

I also will absolutely add bacon, because bacon fixes everything. (and I'm not just saying that to be trendy. I really do love bacon.)

And I will maybe...next week... or never try another bowl of Kale salad again.
